PKC favorite Recipes


Here are some favorite Promises Kept Cookie recipes that are delicious and simple to make. And you probably have all the ingredients already in your pantry. If you use all three cutters when you bake them, kids and friends can enjoy all three promises. They can be saved in the freezer for as long as you want. Then after thawing to room temperature they are as good as newly baked treats!



 Easy Sugar Cookies (Makes 3 dozen)
 

 4 cups all-purpose flour
 1/2 teaspoon salt
 1,1/2 cup unsalted butter, softened
  1 cup sugar
  1 large egg
  2 teaspoons vanilla extract – or to vary the flavor use…
      ..1 teaspoons vanilla extract and

      ..1 teaspoon orange or almond extract


Preheat oven to 350 degrees F. In a medium bowl, stir together flour and salt and set aside. Using electric mixer, cream together the butter and sugar until smooth -- about 3 minutes. Add in egg and vanilla and beat well. Gradually blend in the flour and salt mixing at a low speed until all comes together. Divide the dough into two rolls. Wrap each in plastic wrap and refrigerate for about an hour (until firm).

Remove from refrigerator. Place dough on top of wax paper on counter. Roll out dough about 1/4 inch thick. Separate enough dough from roll to do one stamp. Dust dough with flour. Also dust Promises Kept Cookie stamp with flour. Press the stamp firmly onto dough with the cutter you choose and lift quickly. Lift stamp straight up from dough while holding the wax paper down with other hand. Remove cookie by very carefully working your fingers under it. You want to keep the dough from losing its shape and disturbing the letters of the Promise. Lift cookie – use both hands if necessary -- and carefully place on baking sheet. Dust stamp and dough with flour each time before stamping dough. Space cookies 1,1/4 inches apart on baking sheet.

Bake 12 to 14 minutes in the preheated oven, or until golden. Let stand on cookie sheet for 5 minutes before removing to cool thoroughly on wire rack. Cookies can be stored for about 2 weeks in a tightly closed tin. They can also be frozen.


Heavenly Shortbread Cookies (Makes 2 dozen)

 

 2 cups all-purpose flour
 1/4 teaspoon salt
 1 cups sugar
 1 teaspoon pure vanilla extract

 1 cup (2 sticks) unsalted butter, room temperature, cut into chunks
 1 teaspoon water

 Preheat the oven to 375 degrees F. Sift together the flour, salt, and sugar. In a mixing bowl add the vanilla, the butter and the teaspoon of water and beat until smooth and creamy. Add the flour little by little until the dough is formed. Put the dough on a sheet of plastic wrap and roll into a log about 2 1/2 inches thick and 5 inches long. Chill the dough in the  refrigerator for at least 30 minutes.

Remove from refrigerator and place dough on top of wax paper on counter. Remove only enough dough from the log to  stamp one cookie at a time; roll to about 1/4 inch thick. Dust Promises Kept Cookie stamp with flour. Dust the dough with  flour. Press the stamp firmly onto dough with the cutter you choose and lift quickly. Lift stamp straight up from dough while holding the wax paper down  with other hand.
